Hello. Is it possible to completely disable auto-say? I know it can be turned on and off, but too often I accidentally turn it on.

In the AutoSay Window on the Configuration screen (Game > Configure > Auto Say) (Or, Shift-Ctrl-3)

Uncheck "Enable Auto Say"

No it can't be completely disabled, until such time as a version comes out that lets you customise keystokes, then you can assign "no keystroke" to it, which should stop you turning it on by mistake.

Sure it can be! Just go to the "Auto Say text" box and clear it out, then the autosay button will be disabled and the hotkey won't work!
