I am trying to make a trigger that matches on "* died." but not on "Claw|Skeletal giant died." I tried using:

^((.*)|?<!Claw|?<!Skeletal giant) died\.$ but I get an error.

If its claw giant and skeletal giant, then this should work for you:
^((?!claw giant|skeletal giant)(.*)) has died\.$

That does capture it as well.
